Veggies are hit and miss in our house. Some of our kids love them while others run at the thought of them being cooked in the very kitchen they eat their meals from. These Honey Roasted Sheet Pan Veggies had some of the non-veggie eaters enjoying a few bites (but I would be lying to say they changed their minds completely, they did not)
Vegetables are one of those things a lot of parents decide to either pick their battles with, ignore all together or get very, very strict with. I was very picky growing up, and still am. But, my husband eats just about every single food you could imagine. So it’s been difficult for us to decide how to tackle the vegetable issue. However, as I’ve started to be more adventrous and try more foods and veggies that I normally wouldn’t try – it gets my usually very picky kids curious, and allows us to offer a different varitey that they see me eating so want to try as well.
I will be honest and say it’s not an easy road dealing with picky kids. Most of ours don’t put up a huge fuss for the most part, and I’d say only two so far out of the eight are protesters and would rather go hungry than touch specific things but we are working on it slowly but surely.
This brings me to these veggies today. They changed the game, and while not fully, they chagned it.These veggies are so gorgeous to look at. So colorful and they made the whole entire house smell amazing. We’ve had to make them a few times now and those of us who eat veggies love them. A few others will eat specific things out of it: Broccoli and carrots don’t last too long!They are so vibrant and gorgeous before heading into the oven to start the roast. Sheet pan veggies are delicious with or without meat. We put them on the side of our meals, and a few times we’ve even cooked chicken right in with the veggies which made the most incredible tasting chicken I’ve ever had, its a must try.Still gorgeous after roasting, these veggies will change your mind about how you do your side dish veggies for every meal. For this recipe we decided to do a straight up honey mixture to pour over top, and toss our veggies in before popping in the oven. TO DIE FOR.
Honey Roasted Sheet Pan Veggies
- 10-12 halved baby potatoes
- 10-12 halved Brussel sprouts
- 10-12 baby carrots
- 1 small crown broccoli
- 1 medium sliced red onion
- 6-7 cloves whole peeled garlic
- 2 tsp sea salt
- pepper to taste
- 3 tbsp high quality olive oil
- 1/4 cup honey
Preheat oven to 300
2. Cut, slice and dice all veggies
3. Combine all veggies in a medium bowl and mix completely
4. Add salt to taste the stir in your honey making sure all the veg is covered.
5. Cover and roast for 1 h 45 mins.
6. Uncover and continue to roast for another 15 mins.
When I think about veggies the last thing I think about is honey. But with our kids ever changing tastes and always having to try something new to get more than one child to be adventrous and eat them we knew since they all seem to love honey so much, they’d really enjoy this.While a few of them are still a big work in progress, these veggies are just the starting point for us. I plan to try a variety of different veg, with different falvours to toss them with. Include some meat and even some other options that I will more than likely be sharing here for you all as well.
